Went to Ippodo COLLECTION Ramen today in East Ginza.
Ippudo is a popular ramen chain specializing in Hakata style Ramen.
This is a “tonkotsu” or pork bone based broth that is usually very rich and thick.
The ramen noodles are thin and on the hard side.
Of course, there are now a million varieties and no description of Hakata ramen is valid anymore.
You just find the restaurant that you like.
That’s why I went here.
The interior is real nice as you can see. Not very big but very clean.
This is the AKA MARU ramen. Tonkotsu pork based ramen with shoyu base flavoring.
I ordered it with all the toppings which included bean sprouts, half boiled egg, extra meat, green onions, etc…
